Honey Balsamic Dressing

This dressing is super simple and has been a hit in our house.


Honey Balsamic Dressing
1/4 cup wildflower honey
1/2 cup balsamic vineagar
1/2 cup extra virgin olive oil
1 tblsp yellow mustard
salt and pepper to taste
Put all ingredients in a shaker or empty dressing bottle and shake like crazy.

We do a similar dressing (without the mustard - I hate mustard!). We heat it up and serve it warm over catfish, uncooked baby spinach, with sauteed peppers and onions. It's a Better Homes and Gardens recipe and it's a winner - quick, easy and very refreshing in the summer.

Mmm. Sounds delicious. Unfortunately, Kevin has been having allergic reactions to fish lately... I bet it would work on scallops or chicken as well. I'll have to give it a try.
